- Roughly chop celery, onion and green pepper. Place in blender with vegetable soup, garlic and water. Blend until contents are a coarse puree.
- In a large bowl combine meat, veggie puree, breadcrumbs, egg, salt and pepper until will combined. It works best to mix with clean hands.
- Form meat mixture into 12 equal sized croquettes (egg shaped balls, like mini loaves lol). Place croquettes in 9x13in baking dish and pour can of tomatoes evenly over tops. Bake uncovered for 1 hr 15 min.
- Note: These can also be made with 1lb ground beef 1 lb ground turkey and are just as delicious with less fat!
