- Add the oil into a frying pan, then add in the fried shallots, then stir fry until aromatic.
- Add in the minced pork belly and stir fry.
- Next add in the finely chopped cucumbers and stir fry.
- Add in all of the seasonings, bring it to a boil and then cook on a low heat setting for a while.
- Once it's cooked for about 40~50 minutes, the water has evaporated slightly, and it looks a bit glossy and shiny, it's done!
- All you need to do is put it on some rice and your authentic lǔ ròu fàn (minced pork bowl) is ready.
- You can put it on top of some boiled veggies too. v(≧ )v.
- It's also great with thin udon! You just slurp it up and you won't be able to stop.
- These are the fried shallots that I used and they are sold in Japan! You can get these at a Chinese supermarket, the Chinese section of your supermarket or online!
- Fried shallots are finely chopped red onions fried in oil. The are called [Red onion flakes] and I've seen them used in Taiwanese cooking.
